Yes, We Have No Bananas- Finally!

As I mentioned in a previous post, I usually do my grocery shopping online.  It’s quick, easy and convenient- and it’s delivered right to my door.  What more could you ask for?

Well, it’s great, as long as I don’t mess up my order!  I recently I made a big mistake, ordering 9 BUNCHES of bananas, instead of 9 bananas- OOPS!!!  As my husband, Jason, and I were unpacking the groceries we were cracking up as every bag we opened seemed to filled with bananas.  

So, what to do?  Nathan loves bananas, so he ate a couple every day.  Jason did his part eating several bananas, and I forced myself to eat few (not a big banana fan!).  Drew hates them-so he was out.

A week later, we still had about 7 bunches of bananas left.  So, it was time for some gluten free baking.
Thank goodness we can freeze all of these!

I made 5 banana breads, 24 muffins and 10 mini breads.  I used Bob's Red Mill 1-to-1 gluten free baking flour.  It is a combination of brown rice flour, sweet rice flour, whole grain sorghum flour, potato starch, tapioca flour and xanthan gum- so you don’t have to do all that mixing yourself!  It was my first time using it and it worked perfectly.  (See the recipe I used below)

You use 1 cup of this in place of 1 cup of regular flour- so easy!!!

So  after all that baking, surely I was out of bananas, right?  Wrong.  Ugh!  I still had 3 bunches left. So, I froze the rest for smoothies.  When freezing fruit for smoothies, don't forget to lay them flat, and don't let them touch each other until they’re good and frozen, so they don’t all get stuck together.

so they don't stick together!

So, learn from my mistake- if a grocery delivery service is available near you, try it.  But make sure you check your order BEFORE you checkout not when the delivery guy shows up with enough bananas to feed an army of monkeys!

Gluten Free Banana Bread

3 ripe bananas
2 eggs
1 3/4 cups GF Flour
3/4 cups sugar
1/2 cup oil
1/4 cup milk
1 tsp baking soda
1 tsp vanilla
1/4-1/2 cup walnuts or chocolate chips

Preheat oven to 325 degrees
Put bananas in Kitchen Aid- mix until mashed
Add oil, eggs, sugar, milk, and vanilla- mix until combined
Add baking soda and flour
Mix for 2-3 minutes

Pour into greased loaf pan bake 1 hour and 10 minutes
